Tradition and modernity
At harvest time, the juices are in good hands. The team knows its role inside out, and some of the pressmen have been doing the job for over 45 years. Such experience is hard to beat
In the winery, a little modernity never hurts. The thermo-regulated steel vats are perfect to keep the freshness of our wines. Working concrete vats, with enamel lining on the inside, are a reminder that tradition still prevails.
Manual riddling
Everyday, a quarter turn, and a slight tilt for each bottle. It takes 15 days to turn a batch of 5,000 bottles. This step is an integral part of the aging process of our cuvées. Of course, we've never rejected automatic riddling of the bottles, but we believe that nothing beats elbow grease.
Duty of remembrance
Our generosity is fully expressed in our work.
We don't count the hours, and our know-how is as manual as possible, with a certain talent for doubling up.
Skills passed down from generation to generation, and probably innate too, and Frédéric, Tom, Laetitia and Clara are the embodiment of them today.
